Crustless Quiche


A healthy Crustless Quiche recipe that is perfect anytime, any day!

A tasty, homemade, nourishing meal that’s just like a quiche, although without a flour-ey carb-ey crust, so still grain-free and mostly just eggs, meat, and veggies–an ideal breakfast or whole meal.


This recipe is not only tasty but also healthy; you save calories (and time) by not adding a crust and that makes this dish an appealing option for a lunch or dinner too! Also, without a crust, the flavour of the filling steals the show.


Preparation time: 20 minutes - Cooking Time: 35 minutes - Serves: 4-5

You will need:

- 12 whole eggs - 3 leeks, fresh

- 200 g bacon or salmon, diced - Pinch of black pepper

- 1 tsp coconut oil - Pinch of salt, optional


Method:

Chop bacon into small pieces and cook partially. Or cook the salmon, and flake into smaller pieces.


Add leeks to soften, and let the partially fried mixture to cool off a bit. If you want to add peppers, add them to the mixture now so it sticks with the pieces. Otherwise, it'll sink to the bottom/middle of the pan.


Preheat oven to 180 degrees Celsius.


Whisk eggs in a bowl. Stir in the vegetables and bacon mixture


Grease pie pan with coconut oil.


Pour veggie/meat mixture in the pie pan, and bake for 30-35 minutes.


Let cool before serving. Cut into 4 or 5 pieces and put into individual containers for 4 or 5 days worth of easy meals.
