Veggie Salad


A vibrant summer salad.

Our veggie salad can be used a additional side salad, or as a substantial main course. Salads can add some much needed colour to your plate, not to mention the vitamins, fibre and minerals that come with it as well.


The Kind Evolution veggie salad is quick and easy to prep and cook so perfect as a mid-week snack or meal.


We've added the ingredients we think work well together but feel free to add your own creations and make this recipe your own.


Preparation time: 10 minutes - Cooking Time: 10 minutes - Serves: 4-6


You will need:

- 1 medium courgette, sliced - 10 rainbow carrots, sliced to preference

- 3 spring onions, thinly sliced - 8 stalks long stemmed broccoli

- Handful of halved cherry tomatoes - Half a cucumber, sliced

- Handful of black olives, halved - Roughly chopped basil

- Avocado oil


Method:

Once all veggies are prepared, toss into a large frying pan or skillet with your frying oil of choice.


Cook the vegetables at high temperature for a short amount of time to keep them somewhat raw but fried on the outside.


Remove from pan, season and serve with dressing of your choice.
